
BBQ CHICKEN PIZZA

This single serve recipe makes one pizza the size of a dinner plate. Double to make more than one!

Here’s what you’ll need:
• 1/4 cup Reduced Fat Mozzarella Cheese
• 1/4 cup Egg Beaters
• 1 cup Raw Cauliflower grated
• 2.25 oz Cooked Chicken Breast chopped
• 1/4 cup Reduced Fat Mozzarella Cheese
• 1/2 cup Broccoli (optional)*
• 3 tbsp Sugar Free BBQ Sauce
• 1 can Cooking spray
Here’s what to do:
1 — Preheat oven to 425*F. Line cookie sheet with parchment paper and spray lightly with cooking spray.
2 — Combine cauliflower, egg beaters, and cheese. Spoon the mixture onto the prepared pan. Thin out mixture with back of a spoon and form a circle the size of a dinner plate.
3 — Bake for 30 minutes. Flip the “dough” over. Bake 10 more minutes (may vary based on your oven).
4 — Spread BBQ sauce over crust. Top with chicken and broccoli (or veggie of choice).
